Perata Vineyards 2003 Cabernet Sauvignon Yountville, Napa Valley - The 2003 growing season was a balance of ample spring moisture and several heat spikes through the summer. Early September warm days accelerated ripening of some early varieties, while our Cabernet Sauvignon stayed on the vine well into October developing extraordinary flavors. The grapes were harvested at 26.6 Brix and fermented slowly under controlled temperatures. The wine was aged for 28 months in all new French oak and has been in the bottle 10 months. In tasting you will find hints of black cherry, ripe plum, blackberries with mild cedar and tobacco aromas to balance the fruit characters.
